Combine Jackson Morgan Southern Cream in Whipped Orange Cream flavor with crushed ice. Mix or blend and pour into popsicle molds. Let cool for at least four hours, then serve to guests! These are ideal for a backyard brunch or to satisfy a post-dinner sweet tooth.

Lunch Is Served!
We can always count on The Kitchen Prep for a recipe that’s both delicious and easy to make. This Strawberry Basil Chicken is the perfect way to welcome in spring at your outdoor gathering and we have a feeling it will make an appearance on our summer table as well! We love that the fresh fruit qualities of this dish bring out the flavors of the spring season. If you have guests who avoid meat, you can head to The Kitchen Prep site for lots of fun appetizers and veggie options as well.
Ingredients & Instructions
1 tablespoon olive oil
2 boneless skinless chicken breasts
Pinch of salt
½ cup strawberry jam
1 tablespoon good quality balsamic vinegar
2 tablespoons water
About 7 or 8 basil leaves cut into ribbons
Optional goat cheese for sprinkling on top
Heat olive oil in a medium skillet over medium-high heat.
Season chicken breasts with a sprinkle of salt on both sides and place in pan. Cook for about 5-6 minutes on one side or until a nice golden crust forms. Flip and cook for another 4-5 minutes or until the chicken is fully cooked through. Cook time will depend on the thickness of chicken breasts.
Meanwhile, whisk together strawberry jam, balsamic vinegar and water in a small bowl. When chicken is just about finished cooking, pour mixture over the top, nestling the chicken breasts into the sauce and scraping up brown bits on the bottom of the pan.
Reduce heat and bring sauce to a simmer, letting it bubble for 3 or 4 minutes or until it has reduced and thickened a bit. Stir in most of the basil (you may want to save some for garnish).
Remove chicken breasts from the pan. Pour sauce over the top of each piece and sprinkle with a little goat cheese if desired and garnish with remaining basil. Voila! This is also so delicious the day after over a fresh salad. Yum.
