Celebrate With This Salsa Recipe!
We are drooling over this Halfway Homemade Watermelon Salsa by Brittany Young – the Certified Celebrator! It’s both festive and unique, and we absolutely adore her idea of using the watermelon rind as a serving dish! Check out the recipe below.
4 cups seedless watermelon, diced
1 cup red onion diced (this comes out to about half of an onion)
Juice of one lime
1 teaspoon jalapeño, diced (about one small jalapeño)
1 cup fresh cilantro, chopped
Salt, to taste
Carefully fold all ingredients together in a bowl, or in the watermelon rind as suggested!
Brittany also recommends saving this recipe for topping grilled chicken or fish, or even as a dressing for salad. Yum!!
